Hi guys! :) So today I'll be showing you how to make your own marshmallows at home. Marshmallows are always nice to have as a treat, you can probably make some for your friends too!
You will need:
1/2 cup cold water
2/3 cup corn syrup/ glucose syrup
3 envelopes unflavoured gelatin (21.6g)
2 cups granulated sugar
1/4 cup water
1/4 teaspoon salt
1-3 tablespoons of flavouring (vanilla, peppermint, orange etc.)
1/3 cup corn flour (corn starch)
1/3 powdered sugar (confectioner's sugar)
food colouring (optional)
Method
1. Prepare all your ingredients on your counter/ table.
2. Mix equal amounts of the powdered sugar and the corn starch. (1 cup or more)
3. Lay a sheet of baking paper onto your pan, I suggest you use a silicone one, it will be more easier to remove the marshmallows.
4. Spray your baking paper with some cooking spray or oil it, make sure it is fully oiled.
5. Using a sift, dust a generous amount of the sugar+corn starch mixture onto the pan, tap of the excess and save it for later.
6. Put 3 envelopes of gelatin into an electric mixer and add your cold water in.
7. Let the gelatin mixture sit for about 10 minutes, you will be working on your sugar+corn syrup mixture while it sits.
8. Add 2 cups of granulated sugar, 1/4 cup of water and 2/3 cups of corn syrup into a saucepan.
9. Bring it to a boil.
10. Use a candy thermometer and watch it till it reaches the soft ball stage. (117°C/244°F)
11. Immediately pour the boiling hot mixture into the electric mixer and beat with the gelatin on high for 15 minutes or more. Add 1/4 teaspoon of salt while mixing. You will have a fluffy white mixture after beating.
12. If desired, add flavouring and food colouring after finish beating.
13. On the pan you prepared just now, spread the marshmallow mixture onto it with a spatula.
14. Sprinkle more of the corn starch+sugar mixture onto it.
15. Let the marshmallows sit for approximately 4 hours in room temperature.
16. Remove the marshmallow and top it with more of the mixture.
17. Cut the marshmallows into desired shape with kitchen scissors or a pizza wheel.
18. Toss the cut pieces of marshmallows with powdered sugar to prevent it from sticking.
19. Separate the marshmallows with wax paper to prevent from sticking in your container.
20. And you're finished!
